The 7 to 10 percent figure is consistent across studies. The head is about 9 percent of the body's surface area in adults, and heat loss is roughly proportional. The famous 80 percent figure comes from a 1950s US Army Research Institute study published in 1958 by Lt. Col. William S. Isham and Dr. Eugene F. Du Bois. Subjects were immersed in cold water wearing survival suits that covered the whole body except the head. Of course most of the heat loss came through the exposed head. The data are valid for that specific setup and meaningless in any other. A 2006 study by researchers at the University of Indianapolis, published in the journal Aviation, Space, and Environmental Medicine, found that head cooling only mattered when the rest of the body was already warm and covered. The bottom line: keep your head covered in the cold, but for the same reason you keep any other body part covered.
