Are solid, liquid and gas the only states of matter?
No. Plasma is the most common state in the universe, making up most of the Sun and every star. Several other states are also recognised, including Bose-Einstein condensates, fermionic condensates, and supercritical fluids.

In English
The three states taught in school are real, but they cover a thin slice of physics. Plasma is a soup of free electrons and ions, and it forms whenever atoms are heated enough to lose or share electrons. The Sun, lightning, neon signs, fluorescent tubes, and the polar auroras are all plasma. The rest of the known universe is estimated to be about 99% plasma by volume. A Bose-Einstein condensate was first made in a lab in 1995 by Eric Cornell and Carl Wieman at JILA, who won the 2001 Nobel Prize for it. Supercritical fluids sit above a substance's critical temperature and pressure, with properties of both liquid and gas; they are used to decaffeinate coffee beans without leaving solvent residue. NIST's Standard Reference Database lists more than ten recognised states once you include these and a few exotic ones like quark-gluon plasma and Rydberg matter.
